Because rice is high in starch and carbohydrates and also leaves dishes feeling heavy, try substituting Cauliflower Rice in your next meal. It’s rich in fiber and very delicious, perfect for practically any dish that calls for brown or white rice.
1. Wash and dry cauliflower. Remove all greens and cut into sections
2. With a grater or food processor, grate the cauliflower into small, grain-size pieces.
3. Saute in a large skillet over medium heat in 1 Tbsp olive oil. Cover with a lid until the cauliflower steams and becomes more tender (5-8 minutes). Season as you desire.
You can use cauliflower rice in just about any recipe that calls for rice, as well as stir fries.
